Grilled Jamaican Jerk Pork Tacos with Pineapple Salsa

Take a pork loin, rub it down with a tantalizing blend of spices, kiss it with flames, and discover these sweet and spicy tacos. While you’re at it, you might as well throw a few pineapple slices on the grill, before dicing them up into an amped up salsa. If you really want to make it a party, wash it down with a piña colada.
INGREDIENTS
1 lb (500 g) pork tenderloin, fat trimmed
1 tablespoon Jamaican jerk seasoning, no salt added
Salt
8 corn tortillas
3 slices fresh pineapple, cut ½-inch (12-mm) thick (about 6 oz/185 g total)
1 tablespoon extra-virgin olive oil
¼ cup (1½ oz/45 g) finely chopped white onion
¼ to ½ habanero chile pepper, seeded and finely chopped
2 tablespoons chopped fresh cilantro leaves
1 tablespoon fresh lime juice
1½ cups (4½ oz/140 g) finely shredded purple cabbage
INSTRUCTIONS
Rub the pork all over with the jerk seasoning and ½ teaspoon salt. Set aside at room temperature for 20 minutes. Preheat a grill over medium-high heat.
Place the tortillas directly on the grill to warm, about 5 seconds per side. Wrap the tortillas in foil and set aside.
Brush the pork and pineapple with the olive oil. Place over the hottest part of the grill, cover, and cook until the meat registers 145°F (63°C) on an instant-read thermometer, about 7 minutes per side. Grill the pineapple slices until marked, 4 minutes per side. Transfer the meat and pineapple to a cutting board. Cover the meat loosely with foil, and let it rest 10 minutes before slicing across the grain.
Remove the hard core from the pineapple slices and discard. Chop the pineapple into bite-size pieces and place in a small bowl. Add the onion, habanero, cilantro, lime juice, and ¼ teaspoon salt and stir gently to combine.
Unwrap and place the tortillas on plates. Divide the sliced pork, salsa, and cabbage between the tortillas. Serve warm.
