Super Berry Açai Smoothie
Recipe by Ivy Manning | Photo by Erin Kunkel
This deep purple smoothie is packed with antioxidants from a trio of superfood berries, starring exotic açai, but also friendly blueberries and strawberries. You should be able to find unsweetened açai packets in the freezer aisle at your local grocery store, but if you don’t spot them, use any sweet summer berries you like. A sprinkle of rolled oats disappears into the smoothie but adds fiber, to keep you satiated until your next meal. To tap up the protein, double the yogurt.
Ingredients
1 packet (3½ oz/105 g) unsweetened frozen açai berries
¼ cup (1½ oz/45 g) fresh blueberries
¼ cup (1½ oz/45 g) sliced strawberries
¼ cup (1 oz/30 g) rolled oats
½ cup (4 oz/125 g) low-fat plain Greek yogurt
½ cup (4 fl oz/125 ml) unsweetened coconut water
½ cup (4 oz/125 g) ice cubes
Instructions
In a blender, combine the açai berries, blueberries, strawberries, and oats. Add the yogurt, coconut water, and ice cubes. Blend on high until smooth, stopping to scrape down the sides of the blender once or twice.
Pour the smoothie into glasses and serve cold.
