Cherry & Skyr Smoothie

This sweet-tart smoothie hits the spot after a long run or tough workout in the summer heat. Tart cherries are bursting with antioxidants and anti-inflammatory properties, to help soothe sore muscles. And skyr, the thick Icelandic-style yogurt, packs extra protein. Both ingredients are pleasantly sour, so pucker up! But you can add a touch of raw honey, if you prefer to sweeten.
INGREDIENTS
1 cup (8 oz/250 g) plain nonfat skyr (Icelandic yogurt, such as Smári or Siggi’s)
1 cup (6 oz/185 g) tart cherries, such as Montmorency, fresh or frozen
½ cup (2 oz/60 g) frozen strawberries
1 tablespoon chia seeds
2 teaspoons raw honey
1 vanilla bean or 1 teaspoon pure vanilla extract
1 cup (4 oz/125 g) ice cubes
INSTRUCTIONS
In a blender, combine the skyr, cherries, strawberries, chia seeds, and honey. Split the vanilla bean lengthwise and scrape out the sticky black seeds with the tip of a paring knife, and add them to the blender, along with the ice cubes. Blend until smooth. Serve cold.
