Southwestern Grilled Steak Salad with Charred Onion Dressing

Celebrate grilling season with this satisfying salad, featuring juicy steak, sweet corn, and tomatoes. The lime vinaigrette is addictively delicious, especially when you lightly char the green onions, for a smoky touch.
INGREDIENTS
1 flank steak (about 1 lb/500 g), fat trimmed
2½ tablespoons fresh lime juice
2 teaspoons ground chili powder, no salt added
Sea salt and freshly ground black pepper
2 ears of corn, shucked
3 green onions, roots trimmed
1 tablespoon finely chopped fresh cilantro leaves
2 tablespoons extra-virgin olive oil
7 cups (7 oz/220 g) red leaf lettuce, torn
1 tomato, roughly chopped
½ avocado, pitted, peeled, and diced
INSTRUCTIONS
Rub the steak with 1 tablespoon of the lime juice, the chili powder, ¼ teaspoon salt, and ½ teaspoon black pepper. Set aside to marinate at room temperature for 20 minutes.
Meanwhile, preheat a grill over medium-high heat. Place the steak, corn, and green onions over the hottest part of the grill. Cover and cook, flipping everything once, until the vegetables are lightly marked, about 10 minutes total for the corn, 5 minutes total for the green onions, and the steak is medium rare, about 4 to 6 minutes per side.
Transfer the steak to a cutting board, cover loosely with foil, and let rest for 10 minutes. Cut the corn kernels from the cobs and set aside.
Finely chop the green onions and place them in a small bowl. Add the remaining 1½ tablespoons of lime juice, the cilantro, and ¼ teaspoon salt. Gradually whisk in the olive oil and set aside.
Thinly slice the meat across the grain. Divide the lettuce between shallow bowls or plates. Top with the grilled corn, tomato, and avocado. Arrange the steak on top, drizzle with the dressing, and serve.
