Beef & Mushroom Burgers

Skip the drive thru and the fancy sit-down restaurant—this beef burger recipe delivers a healthy patty that’s just as big on flavor. The secret’s not what you take out, but what you put in. Think: fragrant garlic, meaty mushrooms, Worcestershire sauce, and a beaten egg. Place the patty on a bed of greens, top with caramelized onions, and you’ve got a family-friendly burger that comes in hot—and under 400 calories.
2 tablespoons extra-virgin olive oil
8 oz (250 g) mushrooms, sliced
1 clove garlic, minced
1 lb (500 g) lean ground beef, 90 percent
1 tablespoon Worcestershire sauce
1 large egg, beaten with a fork
Salt and freshly ground pepper4 whole-wheat burger buns
Sautéed onions for serving
Baby spinach leaves for serving
4 slices of part-skim mozzarella cheese (optional)
In a large sauté pan over medium-high heat, warm 1 tablespoon of the olive oil. Add the mushrooms and sauté until they release their liquid, about 5 minutes. Add the garlic and stir until fragrant, 1 minute.
Transfer the mushrooms to a food processor and pulse until finely chopped, 8 to 10 pulses. (Alternatively, you can transfer to a board and finely chop by hand.) In a large mixing bowl, combine the chopped mushrooms, ground beef, Worcestershire sauce, beaten egg, and ½ teaspoon salt, and season generously with pepper. With clean hands, gently mix to combine, and shape the mixture into 4 patties.
Return the sauté pan to the heat and warm the remaining 1 tablespoon olive oil. Add the patties and sear until browned on the first side, 4 minutes. Turn, top with the mozzarella (if using), and continue to cook until done to your liking, about 4 minutes longer for medium. Transfer to a plate and let rest for a few minutes.
Place the buns on plates and stack with the mushroom burgers. Top with sautéed onions and baby spinach leaves and serve warm.
